The Coffee of Origin process begins on the farm. Our coffee farmers pick by hand only the beans that are ready to be taken off the tree. Then, at each and every step, the beans are evaluated to see if they contain the characteristics desirable for the Coffee of Origin cup and if not, they are discarded.

We then create a homogeneous coffee free of debris or any other foreign matter. Furthermore, Coffee of Origin, only uses coffee from the most recent harvest and warehouses it sufficiently for maturity and stabilization. Thus we ensure the best aromas and flavors.

Our RoastMaster™ ensures quality, similar to the brewing or wine making processes. Despite the current computerized methods roasting is not an exact science and is more an art. The RoastMaster™ needs to understand the nature of the coffee, roasting process properties, temperature management and be able to roast coffees along different roast curves. Roasting is critical to the bean because it can change the entire taste of the coffee.

MailFresco™ is our program that allows us to ship coffee from our distribution center directly to our customers. We offer a variety of subscription programs all of which are concentrated on providing the freshest coffee.

Cupping is the traditional procedure in the coffee industry to evaluate the quality of the sample of green coffee. Individual cups of different coffees are prepared according to established guidelines. Each cup of coffee is analyzed at various stages during the selection process. From the moment it is produced on the farm until it is sent to our customers, in order to guarantee its consistency, we take every opportunity to compare our samples.

The four standard characteristics evaluated by cupping are aroma, flavor, acidity and body. Very specific terminology is used to evaluate those characteristics.

Acidity in coffee is a desired flavor characteristic that adds sparkle and to the beverage.
